Here's a simple recipe for a green beans, bacon, and onion side dish, perfect for enjoying the bounty from Gentry Homestead. Green Beans, Bacon, and Onion Side Dish
1 lb green beans, ends trimmed
4 slices bacon, cut into small pieces
1 medium onion, thinly sliced
2 cloves garlic, minced (optional)
Salt and pepper to taste
1/2 cup chicken broth or water
Preparation: Wash and trim the green beans. Thinly slice the onion and cut the bacon into small pieces.
Cook Bacon: In a large skillet, cook the bacon pieces over medium heat until crisp. Remove the bacon and set aside, leaving the rendered fat in the skillet.
Sauté Onions: In the same skillet with the bacon fat, add the sliced onions. Sauté over medium heat until they become translucent and slightly caramelized, about 5-7 minutes. Add garlic if using, and cook for another minute.
Cook Green Beans: Add the green beans to the skillet. Stir to coat them with the bacon fat and onions.
Add Liquid: Pour in the chicken broth or water and bring it to a simmer.
Cover and Cook: Cover the skillet and let the green beans cook for about 10-15 minutes, or until they reach your desired level of tenderness.
Season: Uncover the skillet, add the cooked bacon back in, and season with salt and pepper to taste.
Serve: Once everything is well-mixed and heated through, transfer the mixture to a serving dish!
